Applesauce Burgers with Spinach Salad

Experiment with amounts of oatmeal and applesauce until you get the right consistency.

Yield: 1 Serving
Preparation Time: 15 minutes

1/3 cupUnsweetened applesauce – (chunk style if you can find it)
3 tbspsOld fashioned oats
2 tspsdehydrated onion flakes – to taste
1/2 tsp chili powder
3 ozGround chicken breast
Dressing & Spinach Salad
1 1/2 tspsOlive oil
2 tspsVinegar
2 tspsWater
1 tspPolaner sugar free All Fruit – or flavor of your choice
Salt and pepper – to taste
3 cupsBaby spinach – tear stems off
2 slicesRed onion – roughly chopped
1/2Tomato – cut
1/2 cupStrawberries – cut into chunks (crush a few to enhance the dressing)

Preheat the broiler. In a bowl, mix together 1/4 cup applesauce, oatmeal, egg whites and onions. Add turkey. Mix well and shape into a burger. Spray non-heated broiler pan with nonstick coating. Place burger on the rack. Broil for five minutes, turn over. Broil five minutes more or until meat is no longer pink. Heat remaining applesauce and serve over burger. Experiment with amounts of oatmeal and applesauce until you get the right consistency. While the burger is cooking, whisk dressing ingredients together with a few mashed strawberries. Mix spinach, onion, tomato and strawberries in a salad bowl and drizzle with dressing.
